I know, I know, carrots are not meat. But pay attention, boys and girls.

Tonight, I marinated (6 hrs maybe?) some chicken legs in Goya Mojo Cirollo. Awesome stuff! Set the egg at about 350° and cooked (raised to gasket level) direct, for 30 minutes, turning from time to time. Cherry chips for smoke. They were great, but - big deal. That's not why I'm posting.

While they were cooking, so were THE BEST carrots I have ever eaten!! As follows...

In a small casserole, mix 1/4 C water, 1 Tbls sugar, 1/2 tsp fresh ground nutmeg and 1/2 tsp kosher salt.

Add 2 cups sliced carrots (about 1/4" thick slices).

Top with three pats unsalted butter, 1 Tbls each.

Put the casserole on the grid with the chicken legs and leave it there until the legs are done.

I've never been a huge carrot fan - same for my son. At least we weren't before tonight. We both wolfed these down! Absolutely delicious! I will cook these over and over again!

    Hey, I love carrots, but I've never tried cooking them on the Egg. Thanks for the post and directions. I'm always looking for a side dish to cook.

    I am big fan of carrots….Great flavors can come from carrots! I even have a Pork Roulade method that has grated carrots in the mix.
    Another great way to enjoy carrots on the Egg is to toss, cut spires, with olive oil and a spice mix (your favorite rub, Season-All, garlic powder, S&P, Old Bay, Weber’s Veggie Grill Seasoning….experiment, mix and match) and put them on in a grilling basket or on a slotted pan.

    Change the sugar to brown sugar, be amased what kids will eat.
