Looks awesome Clay, great minds must think alike, I have Pig Candy on the menu. I have 6# of Maple flavored bacon stashed away and one of these mornings very soon I'll get it done. I'm dragging my feet till I have more room in the freezer. If I can't freeze most of it I'll eat it all!

    Hi Brokersmoker,
My Master, Thirdeye, got me wise on Pig Candy.

    http://playingwithfireandsmoke.blogspot.com/1998/02/pig-candy-pig-tails.html

Easy to spin the recipe to the flavors you like. I changed out to black pepper. I also had some fun using chili powder on previous pig candy cooks.

    Enjoy! :)

Eggcelent Clay - doesn't last long around here - mostly cause of me

Made a very large batch once and after cooling I froze the pig candy in a flat tupperware container separating the layers with wax paper. Every once in a while someone (not saying who) would take a piece out and have it frozen - in fact none of it was warmed up. Frozen pig candy is mightyfine - maybe I should crumple some up on a bowl of ice cream. :woohoo:

Well this was two batches of pig candy that I took to work for a picnic lunch the next day. So good it was! I got two strips for myself, the rest disappeared in a couple of minutes. It's addicting.
Good luck with your maple bacon, it will be great as pig candy I'm sure. Smoke it again as you hot cook with a touch of maple wood....ups the flavor and great the next day as smoke mellows with a overnight rest.
    Enjoy!

    Thanks.
And it was like heaven on earth when I took a bite.

I had to steady myself....and save some for others. :silly:  I made two batches about 24 strips of this addiction bacon.

Awesome Frank, frozen pig candy on ice cream....
I'll tell ya, this stuff is addicting. I brought this in the next day to a picnic lunch at work, disappeared in a minute. A co-instructor took what was left at the bottom of the container I brought the pig candy in, just some melted drippings, and managed to pour it on his hamburger. He said "Can't let the drippings go to waste". He's addicted.

I like the idea of the maple wood and it makes a great excuse to get some. I ran out a while ago.

I have a fresh supply of maple syrup (the good stuff) and a fresh bottle of Jack Daniel's Old Number 7 (for medicinal purposes) and I have been wondering how I could get those two in the act with out making the Pig Candy to goopy and sticky. I have to figure this out before I need another bottle of Jack!
