Pork Butt Temp Question

I put two shoulder butts on last night at 10 am. They are about 7 lbs. each. I set the bbqguru for 225 pit temp and 195 probe temp. Everything looked good. This morning at 6 am, 8 hours of cooking, I had a probe temp of 170. That seemed a bit high to me, so I pulled the probe and re-inserted into the other piece. I figured it must've hit the bone or a fat pocket. It also read 170. Is this gonna be a problem, or is it on course for normal? Thoughts?[p]Thanks!

Copper Magnate,[p]Forgot to mention my setup: large BGE with inverted placesetter, drip pan with some water on placesetter, grid on placesetter. guru pit clip on end of meat probe.

Copper Magnate,[p]I'm starting to think pork but and fresh pork shoulders are in a world of their own!
The last 5 shoulders I've done have all cooked faster than "ususal" i.e. 1.5 - 2 hours a pound. They we cooked just fine in 10 - 12 hours (all have been in the 8.5 to 10 lb. range)
The last two I cooked this past weekend (7.75 lbs each)took nearly 22 hours and plateaued twice! Once at 158º for about 3 hours + then again at 189º where they say for almost 4 hours. Never seen that before.
You might be okay. Who knows any more?

I completly AGREE! I did three Butts this weekend (73"s) and they took 0ver 25 hours @ 225!!!! What gives? That's over 3.5 hours/pound. As it was, I pulled them at 180. I used the fork test...poke and turn. They tasted great, but think they were a just tad tough....could have used another 45 minutes.....I had 12 hungry people eye the EGG as if they were going to eat IT![p]Paul

I'll chime in with my rant about the longest cook EVER last weekend, two 6.5 butts took 25.5 hours. Must have been sunspots or something. Oh, well...we've been noshing on great sandwiches from the results, and I froze some for later. Acknowledge and move on.
