How long does a Brisket take???

Is there a way of measuring...say, an hour per pound?

    Depends... many people say 2 hours, many say less. Mine are about an hour and fifteen minutes. Of course, pit temp will affect it. Some cook at 200, some at 225...250 and so forth. I use 225-230.

    ShortRIB,[p]The grade of meat also matters. A USDA Prime brisket cooks much faster than a USDA Select one does.

    tn slagamater,[p]No I'm not a meat inspector, but just imagine all the great bribes you could get....LOL The only prime brisket I did finished at ~1 hour/lb where the choice normally is 1.25-1.5 hr/lb and the only Select was just under 2 hr/lb. The prime was GREAT, but in all truth not worth the extra money over choice 9 times out of 10. A good looking Choice will make me very happy. Choice over Select EVERYTIME!!! [p]Steve-B
