Flipped my Pork Shoulder, good chunk got separted.

WHen flipping my pork shoulder I am smoking, I lost a good amount, mostly the outside, 3/4 of the top and only 1/2 inch deep. I placed it back on and place it back correctly. Will this dry out now that there is a space btwn pieces? Anything I can do to correct this now

  • should be fine. never bother flipping, myself. anyone? anyone here flip their butt?

    for me, a butt is the easiest cook. rub it, throw it on, and open the dome most of a day later.

    How long's it been cooking and at what temp. What's the internal temp of the butt? If it fell apart, maybe it's DONE! 195-200° internal and it's feedin' time!

    Oh, and I don't flip either. No need.

    I hate it when I go to the kitchen for food and all I find are ingredients!

    You will be fine, but in the future, don't flip :ohmy:
    One of the first [and best] lessons I learned on here was not to even open the egg during that kind of cook ;) Someone's wife bet him he couldn't do it, but he persevered, took pictures, etc :woohoo: I managed to do it on my first butt cook, but it took a lot of adult beverages to keep me from peeking :P
    Serious now, don't flip, don't open, watch your temps, it will take care of itself B)

    We are a flip-free zone here. It doesn't make much sense on an indirect cook, really.

  • Yea I wouldnt have flipped but i dont have a plate setter yet so it isnt really indirect cooking right now. Oh well soon enough Ill have one and will not flip. Thanks for the advice.

    As a master of one butt, no flip, but when I went to remove it at 200 it started to come apart, had to use two hands, two tools, and free it from the butt to grill gunk. Fed four, then pulled pork enchiladas that fed three of us twice this week, me once for the final three when I came home late, and still have about 1/3 left in freezer! For what, $12 worth of meat (and 3-4 in lump!) that's a lotta great eatin'!

    I do not flip my butts. However, when I obtain butts or especially shoulders from Costco sometimes they are boneless. I have found that if I skewer them with several chopsticks it helps to maintain their shape and makes it easier for me to remove them without them totally falling apart.

    Ouch. Don't know how that will turn out, probably OK if you put it back on. Don't flip a shoulder, don't even open the lid until it's done. It's a pretty forgiving piece of meat, but it's way easier to just leave the lid shut.
