Snapping Turtle recipe.

Anyone have any good recipes for snapping turtle. I just cleaned a couple last night now looking for a good recipe. I was thinking some kind of soup but I have enough for a couple cooks.

    Get who ever you know that makes great fried chicken & have them do the snapper the same way. My friends wife makes fried turtle that is out of this world. I would try this before I made soup out of a nice snapper. Fry & enjoy :)

    Errr, you're supposed to cook it before you eat it...D'oh! :S

    I've had it fried and it was good. ;)

    That is how I usually prepare it. I am just looking for some alternatives to just frying. I agree fried is pretty good but I think with the right batter you can make a fried turd taste good. :laugh: :laugh:
  • BAKED TURTLE

    Cut up turtle meat into serving sized pieces and soak for several hours in water containing a little salt and vinegar. Wash in clear water; drain and dip each piece in lemon juice, then in beaten egg. Salt and pepper and roll them in a mixture of flour and cornmeal. Put in hot fat and brown well on all sides. Add 1/2 cup hot water; cover and bake slowly until meat is tender. Add a little water at intervals, if necessary. Baking temperature: 350 degrees.

    TURTLE STEW

    1 medium onion, sliced; 2 cups diced celery; 1 cup fresh lima beans; 2 lbs turtle meat, cut up; 4 Tbsp butter, 3 medium potatoes, diced; 3 medium carrots, diced; 1 cup tomatoes; 1/2 cup fresh parsley; salt and pepper

    Place onion, celery, and lima beans in Dutch oven; cover with water. Bring to a boil; reduce heat and simmer 30 minutes. Saute turtle meat in butter in a skillet until browned on all sides. Add meat, butter, vegetables, and seasoning to oven and simmer for about 45 minutes or until vegetables are tender. You can probably exchange any vegetables for those you can't have.

    I cleaned a 75 pounder years ago. I tried every way I could think of to cook and eat it, but it was too tough, even after much boiling. I even ground some of it into hamburger and still couldn't eat it. This turtle I'm sure was very old. I have always felt bad for catching and killing him. I hope yours are younger and more tender. Bill
