Pizza after blowing up my KA

I had to buy ready made dough after my KA broke while making dough. Sweetbay has better dough than Publix's non-stretching rubber like dough. Just a basic pizza, but it was pretty good.

Looks great. What is a KA?
-
Al if you "dock" that dough you could elimate most if not all of those bubbles...that is unless you want the bubbles....
-
Kitchen Aid blender or machine.

Hi Wess, how's it been going.
I love bubbles in my pizza. I can't mine to get that big.
-
Believe it or not, I like the bubbles. I wish it browned up more.
-
Thanks, I'm learning

I wondered about the Publix dough. Trying to roll it is an exercise in maddness! Thanks for the tip.. I'll try Sweet Bay next time!
-
See Wess, I think we all like the bubbles. Nice air pockets
Come on big guy lets hear from ya!!! It's all good. Can't wait to try pizza again. Going to try different dough this time.

Morning Al,
Looks like you are on the road to recovery  Thanks for the tip on the SweetBay Dough, I have been buying Publix with no huge complaint, but my knowledge of doughs and baking in general is sorely lackingOwning a BGE certainly provides a well rounded educational experience :P
Have a Good One :cheer:

Make your own pizza dough
5 cups flour
1 pack regular rise yeast
1 1/2cups water
1/4 cup EVOO
1 1/2 tsp salt or 3 tsp Kosher salt
Pinch to 1/4 tsp of sugar
Proof yeast until bubbly.
Mix flour, yeast, water and EVOO until dough until balls (in Kitchen Aid use dough hook) but don't over mix. Hand mix until smooth. Form into a ball.
Cover and COOL (50-55 degreeF) rise until double. If this is for tomorrow let rise in refrigerator. A longer rise time lets the flavors develop.
Punch down, split into two equal balls. Let rise again until double.
Make 2 pizzas or make one - freeze other for later. -
And now I'm going to assume SweetBay dough is something you can only get in Florida!?!?
-
Your pizza looks great Al, I can only imagine how it would have looked with your KA dough!
Hope it was as effective as chicken soup, lol. -
I always add honey as the sugar source for my pizza dough. I find it gives it a bit of a crispier / less doughey shell. Maybe it's the sweetness I like. I'm not sure, but I like it!

Hi Staci,
SweetBay and Publix are both supermarket chains based in Florida, they probably cross state lines, but not as far as Iowa.

I also like using the high gluten flour also.
-
Al,
Looks like you have the pizza dough tossing thing down. I would make pizza but that means eating it and right now we are trying to watch our carbs. It sucks.
