Boston Butt cook

Just another butt cook that was ohhhhhhhh sooooo good! :P

I put this on at 10:30 last night or Saturday night. The small one was for us and the big one was for our next door neighbor. No charge for the cook just the meat.

Ours came off first at 1:pm after 14.5 hrs and I socked it in to cooler. (No pic)

The neighbor's butt came off at 2:30pm after 16 hrs.

Here all plated up is pork butt and potato salad and macaroni salad and some table onions. yum yum :P

    Very nice, Tim. I'm doing one of those next week for a teacher my wife works with. Kinda makes you feel like you could do this for money, doesn't it?

    Mark0525, Thanks. I make my own sauce and rub this rub has a lot of turbinado sugar in it. I serve my sauce on the side. Especially on the day of the cook I love to taste the flavors of the meat and the bark. Then if I have left overs I may add sauce. :) Tim

    Thanks Steve. As it turned out my cook got put off for one more day. My neighbors company was delayed by one day. Tim :)

    Did you say you had any leftovers. From the way it looks, I would have scarfed it all down. I would have left the macaroni salad off the plate, gets in the way of meat :laugh:

    Yes, Mark I used my CyberQ II. I started my egg at 9:pm and after an hour I put the meat in so that was 10:30 and I watched it for an hour and then I want in and showered off and checked it again before going to bed. I woke at 5:30 am for a plumbing check and went back to bed. Then I finally got up at 7:am and all was still going great. Once I closed the dome at 10:30pm I never opened it again until about 12:30 pm when the telephone man came by and smelled it. So I gave him a peek (he is also a friend). So yes, I slept like a baby.     rosros, I must admit I had left overs but, I tried to eat as much of the butt as possible. Believe me I had seconds on the meat. I am also very full. Tim :P :whistle:

    Have you done a pulled beef before? If so which do you like the best and why? What are the pros and cons doing one over the other?

    Mark you will do fine. I will tell you one thing I use that helps with the cook. Now some will disagree but I use a wiggle stick.

    I cook butts with out my CyberQ II and when I do I

    make sure the egg was cleaned out

    is full of fresh lump almost up to the top of the fire ring (i use fresh lump and not used lump for this cook then after the cook I will use the used lump on other cooks)

    after I lite the egg for the cook I wiggle up from the bottom to make sure i'm getting air. i will set the plate setter and the drip pan and food grate in as well

    after the smoke clears and the egg is stable at 275° I put the butt in

    now the butt will absorb the heat in the egg and the dome temp will go down but do not mess with the daisy wheel or the bottom damper or you will be chasing it all night

    the egg will recover

    I would stay up with it for another hour or so

    then check it every three hours or so

    if during the night the dome temp goes down you can open the bottom damper and take your wiggle stick and wiggle the ashes out being careful not to dislocate the fire grate

    then put the bottom damper back where it belongs

    it's easy peasy lemon squeezy after you've done it a few times. ;)

    Mark I have not done a pulled beef. The closest I have come to doing a pulled beef is when I sear a beef roast in a dutch oven then I add my liquids and let is run it's course. I don't remember the cook I would have to look it up. Tim :)

    Did a couple butts the other day myself. Good of you to do one for your neighbor. You getting much saddle time this spring? If it were not for work and a few 200 milers for the day shopping out of town poor Wart Hog would feel unloved! :laugh: Didn't make a spring ralley up state this year for OK Fest. Still trying to figure out where we are going for our summer run. Sure would like to head back out to Colorado but between the economy and that German Shepherd pup I hope to have ready to be sent to me in Sept. will just have to see.

    No Dean not much saddle time. It has been a weather event after another. I wanted to ride this weekend but it rained all weekend thru Monday some severe. I stay out of the severe stuff. We ain't made any plans for this summer either. Cindy said something about Myrtle Beach and I was wanting to go to the Indyfest. I guess we will have to wait and see. Tim
