ok.. first itme I have never boiled my ribs. they were Great, took some pics, but they look like every body elses. so why waste the bandwidth.
anyway, did 3 hours indirect at 260. , 1 hour wrapped and 2 hours after. (only becouse wife wasnt home yet) should have only done one hour after. used some sweet baby rays for last 30 minutes, Hint: I heat my sauce before putting on ribs, why put something cold on something hot.
I ccouldn't get the xl below 260, yes the thermometer is calibrated. it ran all day at 260 with about a 1/8inch open on the bottom vent and the daisy wheel with half open.
boy, damn, those were great ribs, even though some were just a little over done.
I could tell they were done by the meat pulling back ion the bone and they fell apart when i took them off.
this is great thing to cook when you have to work around the yard all day. got the grasss cut, trimmed, blew off, and a whole recycle bag of weeds pulled.
Even got a little sauce on my new cotronics gasket. It will live.
Now i just have to do a pulled pork and a Turkey, then I will go for something more exotic.

well, you boil them for 60-90 minutes, season them up and throw them on the grill, for 30 minutes and done.. can taste great, but no where like i made today!XL Walled Lake, MI
