anyone have some good recipe for mahi mahi ?

FRESH CAUGHT.
Mahi-Mahi, Little Steven, (He caught it, She cooked it), Little Chef
INGREDIENTS:
Mahi-Mahi, fresh fillets, skin off
Coated lightly, both sides, with ‘real’ Mayonnaise
Seasoned with Salt & Pepper
Dusted lightly with DP’s Raging River
Fresh Lemon Juice
Procedure:
1 Egg to 400° F. dome temp.
2 Mahi, placed presentation side on grill, approx 5 minutes.
3 Flipped.
4 Squeeze of fresh lemon juice.
5 Finished, lid down, until tender, approx 5 more minutes.
6 Extra squeeze lemon juice.

I have used the recipe Richard posted and it is excellent :woohoo: It will also work on Grouper or most any fish headed for the grill

I tasted it at the afterfest when Michelle made it, and it was GREAT. I highly recommend her recipe.

I just this minute finished some Mahi-Mahi using Richard Florida's recipe. I followed the recipe to the letter and let Shirley Small do her thing for 5 minutes on each side. Perfect... Could not have been better.
I hasitated when I saw the 'mayonaise' rubbed onto the fish but it worked out well, no mayo flavor at all.
Thanks Richard. I hope our paths cross again soon.

Mahi doesn't really need a recipe. Here's some just drizzled with some oil, dusted with one of the DP rubs, and grilled over high heat.
Jerk Mahi is great too, for that you'd need a recipe.
Also, Village Idiot has a recipe for snapper pontchartrain. I love blackened mahi served in the same manner.
