Fleming's Dinner at home

T-rexed some filets, grilled some asparagus, and baked some Fleming's potatoes. Love going there for dinner, but this was restaurant quality and then some. Used 50% more jalapenos than the restaurant does....

While the steaks were resting, I cooked the asparagus...used EVOO and JH Papa Charlie's Greek Rub...

I like how you put the asparagus. It looks like the game, PICK UP STIX.
The nice thing what you made on the EGG was heck of a lot cheaper. We went to Sizzler and it cost over $50 for the 5 of us. I said to my wife," you know how much I could have grilled for that much ?"

Here's how I do the Fleming's Potatos
FLEMING'S POTATO
Ingredients:
• 1 - 1/2 cups heavy cream
• 1 cup half & half
• 2 tsp. salt
• 2 tsp. black pepper, fine grind
• 1-2 small jalapeno without seeds...
• 3 oz. leeks
• 3 cups grated cheddar cheese +1/2 Cup
• 4lbs. potatoes
Steps:
Heat cream and half-&-half in large saucepot on medium high heat to simmer. Add salt and black pepper.
Fine dice the jalapeno. Cut ends off leeks and dice only the bottom 3”. Place both in large mixing bowl.
When cream is hot pull off the stove, add cheddar cheese and blend it thoroughly.
Peel potatoes and slice to a maximum of 1/8" on a mandolin slicer or even better, your meat slicer or something that will make the potatoes as thin as possible. Combine potatoes and cream mixture in mixing bowl with leeks and jalapeno and mix well.
Spray sides and bottoms of 9”x12” baking pan with pan coating. Place potato mixture in pan and evenly distribute the potatoes. Place the additional 1/2 cup of cheese on top....Cover with aluminum foil. Bake at 400* degrees for 45 minutes.
THIS IS A VERY IMPORTANT STEP:
At the 45 minute mark, stick a fork in the center of the potatoes to check on their "doneness". They will probably need a minimum of another 30 minutes total, but you can adjust your temp up/down as your gut tells you to....it's just potatoes...right??
Remove wrap and foil and bake an additional 10-15 minutes to brown top of potatoes.
Serves at least 6 people.
