Sauce Suggestions

Going to do the grilled pound cake and pineapple thing tomorrow. Topped with a scoop of ice cream was just delicious but it really wanted for a sauce of some sort. Anyone got any suggestions?

    Steve-B,[p]This recipe is close to what I am thinking about:
    3/4 cup (8/1 liter) light corn syrup
    3/4 cup (162 grams) firmly packed light brown sugar
    3/4 cup (1/8 liter) Bourbon
    1 1/4 sticks (10 tbsp/375 grams) unsalted butter
    1/4 tsp ground cinnamon
    1/4 tsp freshly grated nutmeg
    Combine all in a saucepan and simmer over low heat for ~25 minutes. [p]I used something similar to this for grilled peaches and icecream.

    Thanks, Steve - that sounds like a winner! Just didn't want to spoil the thing with carmel out of a squirt bottle.

    Not really much of a recipe. Get some fresh pineapple and cut it into thick rings, dip in melted butter (or coconut milk) and dredge in sugar - cook 'em direct until they soften a bit. Serve on top of some grilled pound cake (usually just butter them as well) and top the whole affair with some ice cream and, tomorrow, Steve's sauce.[p]There's usually never a problem with leftovers.

    how about a banana's foster, or, your really close the the other recipe, just add bananas to it, and maybe top the whole thing off with toasted coconut. Pineapple, banana, and coconut..........Call Spring Chicken for the rum and you got yourself a party.
