Indirect Cooking

When the recipe calls for indirect cooking (e.g. Brisket - - is it referring to the ceramic peice used to make pizza?

    Just Learning,
    Indirect cooking really just means having something between the fire and the meat so that meat doesn't receive any direct radiant heat from the fire. You can use a metal drip pan, you can use a pizza stone, you can use firebricks, or you can use a plate setter. WessB has some photos of indirect setups on his website at www.wessb.com.
