What to bring to a potluck?

Hello again from the Bahamas everyone! Going to a BIG potluck Saturday. Can't decide what to bring, just know I want to do something on the egg. Any ideas?

Jo, never been to the Bahamas , but my son just got back and said that compared to going to Mexico the people were extremely rude and service was universally slow. He just didn't think he would ever go back. Any truth there or is he just being a kid with an attitude that gets you that kinda service, hope not.

I'm going to a potluck tomorrow night, and my offering is make your own sandwiches comprised of ginger-lime marinated pork tenderloins (Egged, of course!), sliced thin and served with rolls, pickled red onions, roasted red peppers, arugula, and a wasabi-mayo dressing.

Well, there's a mixed answer to your question. Service is slow just about everywhere, but it's not nessesarily a bad thing. Living in the islands, people have a different attitude about most things. The biggest is they are not in a hurry to do anything! The benefit is less stress, lower heart attack rate, less car accidents, etc.[p]As far as rudeness, I'm sorry your son encountered that. I have found some rude Bahamians, but more warm and friendly ones. I find if I great them with a smile and "good morning", I almost always get the same in return. Oh, and I stay away from the Straw Market. They are just plain not nice![p]The best advice I was given before moving here, was to have a good sense of humor about EVERYTHING. Delays, power outages, not finding what you want in the grocery store, lots of things to upset someone so inclined. Luckily, I am not inclined that way.[p]Hope I answered your question. Here's a link to the recipe. I always make a double batch. It fits perfectly in a 13" x 9" foil pan. Cook at 400° indirect if you are cooking on the Egg. You can vary the consistency (i.e. thicker or thinner) by adding corn meal to thicken or make it thinner by not draining the whole kernel corn. It's really not hot at all, but you can omit the peppers if you want. In fact, you can add just about anything to make your own variation. This recipe is requested everywhere I make it and I sell it for $8 pan. Very popular at Thanksgiving! Enjoy!![p]Jim
