Cindy and I were grocery shopping today and I wondered off to see if I could find some Perl Hot dogs and I did not. So I looked at some skinless smoked sausages. They were Eckrich skinless pork, turkey and beef. So I picked them up with some buns and potato salad. When we got home I diamond cut the two sausages and sprinkled them with some DP Pineapple Head rub. I had the egg lit and waiting for it to come to temp. I planed to sear them and them raise them up to be sure I had them warmed all the way through because they were already precooked. As it turned out they were very good. :P

I have seen the diamond cuts on hotdogs a few times on the boards, but I have never tried it. What does it do?

He never stops posting!!! Just scan down your screen.
He has been a member for less than a month and has close to 400 posts most of which are less than informative.

I don't think it's like that Mark. Rich is a level headed, regularly contributing member. For him to speak out like that indicates a solid oberservation.

But so what if someone wants to comment on every post. Seriously who is he to even comment about it. If he was posting and making rude remarks or causing problems then I could see. It may be none of my business but I just think that's rude. So I guess I have to worry about being on here so much and posting. I love posting comments even if it's just to say "way to go" Ok I said my peace :)

I've been a member I think for 2 months and I almost have 750. So do I post too much? I was told when I signed up not to worry if you're a newbie, gold or whatever just go on and have fun and be comfortable.

Spoon, I slit the sausages for two reasons.

    1. To absorb more smoke

    2. To get the rub into the meat

When I seared them the rub melted and carmelized and I had some hickory wood in there for the smoke. The edge if the diamond cuts were a little crispy so texture played a role as well. Try it you may like it. Tim ;)

I try and be in the first 3. There shouldn't be any guidelines as far as when and how many times to post and no one should EVER bring it up that they post too many times...ok enough said. Everyone keep posting. If you don't like it don't read them :) (not directed at you Village. I know you've helped me out before and I appreciate it)

Obviously with a little dash of #4. :)

That's OK, I kind of think myself as an even split between 4 & 2. :pinch:

I see your point though, I just did a count and BigA was responsible for ~10% of the main forum posts (has he been going crazy in the OT forum? I can't see those). Anyway, he's been busy! :)

    Pretty funny actually.

Mark, how is your criticism of Rich different than his about BigA? If one has the freedom to post on every little subject and have 5 new threads on the front page that he started, then another member has the freedom to comment on it.

Ok, If you don't see the difference then there's no point in it. I'm not looking for a fight and I will drop it but I will tell you the post that I saw BigA make were just comments, not personally addressing them at one person like Rich did. I'm done trying to explain the difference

Im talking about your criticism of Rich vs Rich's of BigA. Your actions are no better than his, despite whether you personally believe it is justified or not.
And yes, I realize Im dooing the same thing. ;)

Oh, and Im not looking for a fight, and Im done after this, BUT let me get this one last jab in..... :)

Eckrich smoked sausage is really pretty good. I use it sometimes and never fail to marvel at it's flavor and wonder why it has been so long since my last cook with it. Nice and easy. That's how we like it. :)

Sorry Baccus. Please let me know when my input is acceptable to you.

    Folks:

This forum has taken a nose dive since I joined. Giving kudos to someone's cook is now being ridiculed, and to question that is reason for a face-slap by another.

Perhaps, it's time to move on.

Thanks Jay, Cindy has had some tissue removed from the inside of her mouth and she is on a liquid diet of sorts. She has another week of healing to go yet. So I have been cooking for just me. She nibbles and gets mad because it's good... Tim
