Hi everyone,
I put 3 racks on the BGE at 1pm low and slow 250 for 3-4 hours. I am going to test temp. at 5pm with instant read thermometer. Anything else I need to know? Thank you in advance.

Test by bending, should bend in (almost) half.

Yes, pick it up with tongs on the long end and see how it ends.

Mike, mine have been on for 4 hrs. They look great. Had a little trouble keeping it at 250. Spiked up to 300 after 3 hrs and got it back down to 250-275 and now back down to 235 or so. I used the tongs and they kind of break but really don't bend. Should I sauce and foil now for an hour?

Sounds like they are close, if you want fall off the bone, foil. Maybe only 45 minutes.

Ok, I pulled them off because when I tried the bend test they are breaking. Should I still foil for 45 minutes? They smell great...Thanks Mike

Mike, These turned out better than I ever made them before (only tried 2 other times...lol) I ran some over to my parents house and my dad said they were the best he ever had and I agree. Much better than an y restaurant that I've eaten at. Thanks Mike for all you help again. I will post pictures of the final product soon.

Mike, I would love to eat at your restaurant. Where I live the best around is Smokey Bones and I blew those away. Maybe some day I'll get to your place
