Swoop's Original Pig Wings

Anyone who ever declared that they would do something "when pigs fly"...well, you're still safe. These aren't actually pig wings, but they sure are good! I'm always looking for an excuse to eat more pork, and it seemed that there were plenty of chicken wing recipes here, so I created the pig wing. It's really just a big, thick, boneless pork chop cut into three strips, then soaked in a hot-sauce marinade, grilled, and glazed with barbecue sauce. Have fun with pig wings. These would go very well served with French fries and corn on the cob or a fresh green salad.

4 boneless pork loin chops, 1 1/4 inches thick
1/2 cup hot sauce
1 cup your favorite barbecue sauce
1/4 cup honey

1. At least 4 hours before you plan to grill the "pig wings," cut each pork chop into three long strips. Place the strips in a zip-top bag and pour the hot sauce over them. Seal and refrigerate for at least hours and up to 12 hours.

2. In a small saucepan over medium heat, warm the barbecue and honey, stirring often, just wintil well blended. Set aside.

3. Prepare the grill for cooking over direct medium-high heat. Remove the pig wings from the marinade and grill them for 2 minutes. Flip, and brush with the honey-barbecue sauce. Cook for 2 more minutes. Flip, and brush with the sauce. Flip and brush often, cooking for another 3 to 4 minutes for slightly pink and juicy, or to your desired degree of doneness. Transfer to a platter to serve.
