Briskett Dripping

All while back, I saw a post where someone mentioned doing something with the briskett dripings. (Other than throw them out)[p]I have always thrown them away in the past. Obviosly, this is a mix of Fat Drippings, Water and briskett juices that dripped into the pan.[p]Does anyone out there use the drippings?[p]If so, how? [p]

    Depends how blacked up the drip pan stuff has gotten. If you are able to keep it clean and not burned, then give it a try and see if it is bitter. If not, then it should be good for a smokey gravy. Usually I chuck it...but I don't use water, and it is usually black. [p]Now the juice that collects in the foil after you wrap it and place in cooler.....that stuff ya gotta save. You got one of dem fat seperatin' cups like you use for gravy? Try pouring the juice in one of those, and pouring out the good stuff after the fat rises to the top, and mix it in with your sauce, or pour over the meat. I'm sure you could use the stuff to flavor a lot of things, and it certainly doesn't belong in the trash![p]Happy sunday

    you can use the juices to thin the bbq sauce.
    If you used a rub that has the potential, take the drippings, not the rendered fat that you collected to thin the sauce. just use a turkey baster and pull the juices from the bottom of the pan and throw out the grease. when I did the five hour brisket I put the meat in a crock (after I sliced it) added back the juices with some sauce to give a light evenly disbursed sauce.[p]Scott

    Nature Boy,[p]I've always thrown out the juice that collects in the foil after it's wrapped because I dump a beer in there when I wrap it. Do you think it would still be good to save since I used beer in the foil?[p]

    james,[p]after reading nature boys response, I should add, just use the stuff from the foil. When i did the 5-hour those were the only drippings. since it went into the foil after only a few hours I didn't even have to clean out the drip pan[p]scott

    Nature Boy,[p]You have a point, and I did indeed use the drippings to pour over the meat. It was great. Actually, it was good, but the guests were first timers, and they thought it was great. The juices helped a lot, and helped overcome some of my earlier challenges, like the fire going out due to my lack of attention to the egg....[p]For that, I blame beer.... :-)[p]
