Temp of a Pork Shoulder 180 or 190?

I have heard different opinions on the pull temp of a pork shoulder (or) Boston butt.
Should I pull the meat off of 180 or 190 degrees?

Cook started at 9 pm CST last night, I am in hour 12, looking to go 14 hours total.

Horseradish,
For a 'pulled' pork, go to 195ish and try not to break 200. Starts to get mushy. -
This is one topic that is rarely contested, I think. Assuming you want "Pulled Pork" take it to 190min, up to 200ish.

Out of the two choices you have there. 195° +/-.
Use the bone twist or fork test. You will easily know when it is ready.
If you are cooking it hot & fast or a require a long rest pull a little early mabye back to your 190°, the cut will continue to cook due to the high heat cook or the long rest.
