That last pic is making me want to cry. That looks fantastic. I love using the black sesame seeds too. I know what I"m grabbing tomorrow at Costco if they have it. -

I did some recently too. I got a 1 lb steak, cut it in half so I had 2 sqare-ish "logs", marinated in teriyaki for a bit, and threw it on the hottest fire I could muster. I literally grilled for 15 seconds per side - 1 minute total! :laugh:
For a the side, I blanched some baby bok choy, hit them with the teriyaki and finished them with a quick grill too.

Load your Egg with fresh lump, make sure it's not overpacked and you have good airflow. Light it and leave the top & bottom wide open. Walk away for a while and it should be scorching when you come back. -

Right... and by "wide open", that means if you have the daisy wheel cap on top - take it right off completely, and on the bottom draft, I even keep the screen wide open. Even the screen is enough to restrict airflow and keep the temp down (at least in my experience).
