Hey Guys,[p]I have some chicken breast and legs that I want to cook indirect.
How long should it take, and should I put olive oil on the chicken to make the skin more crispy? Any info from experience would be helpful.[p]Thanks,
Mark

    Steel Big Boy,
Indirect? About 50 mins-hr at 250-275. I just did some legs, thighs and breasts direct and it took 35-40 minutes or so. Takes more attention, but the skin does crisp up much nicer direct. Maybe try 35-40 minutes indirect, then remove the pizza stoned/drip pan or whatever you have for indriect cooking and let that skin crisp up nice over direct 280-320 heat? Look for 160-165 in the breast and 170-175 in the drummies (or thighs, if cooking). Sauce only at the end, maybe last 15 minutes or so, if you're one that likes some sauce with your chicken.
