About 1 hour to go - questions
Have about 1 hour or so to go. Do I wrap brisket in foil and let it sit for a while or take off and carve when ready?[p]BTW, got a great marinage sause off internet:[p]Grilled Brisket
From the kitchen of Kevin Taylor, the BBQGURU[p]Dr. Pepper Marinade for Brisket
1 cup Dr. Pepper (NOT diet)
1/4 cup dark soy sauce
1/4 cup lime juice
1 1/2 cups oil
1 teaspoon hot sauce[p]Mix all and marinate beef overnight.[p]Then I use my own rub and lay it on heavy the next day and let it sit for a couple hours......[p]Kevi's Buckin' Beef Rub
1 3/8 cups chili powder
1 tablespoon cayenne pepper
2 tablespoons pepper
4 tablespoons garlic powder[p]Been taking "nibbles" and it is outstanding.

I would wrap in foil and let rest 1hr in cold oven. Happy Q'ing. I let my brisket get to 185 for slicing and 190 for chopping. These temps are before the rest.

I've done it both ways, and I prefer to foil it for an hour or so.. I usually throw a bit of beer in the foil for the foiling period..[p]
