pork butt

Going on 24 hours with an 8lb fresh cut butt and temp is at 178. I'm soo hungry I'm about to cut a chunk off just to ease my belly but will resist. Anybody have an idea about how much longer at 275 - 300??

    you're nearing the end of the plateau stage and it shouldn't be but another hour or two at the most. I also have a 8# that has been on for 18 hours but at 255. It has been riding the 162° plateau for 2 hours now. BTW after you're off the plateau kick the dome to 300°.

    greggor'spigstye,[p]My pork butts never did take more than 16 hours or so. So many here cook them longer.. dont know why that is.[p]You are in the plateau which should be about done and the temp will start climbing now. I wouldnt expect it to take more than a couple hours now.

    greggor'spigstye,[p]Yeah, I think it should be done very soon! Not sure why it's taking quite so long...[p]My 6.5 has been on 11 hrs @ 250 and sits at 170 internally currently!
