Duck.... results

Well, according to the family, it was the best duck I ever prepared... so thanks to everyone for their suggestions. I went with the low and slow, on a scored skin, brined duck... seasoned with just salt and pepper. Here's the results:

I made a hoisin dressing and sectioned some valencia oranges. Topped some romaine with the oranges, and then some orange slices, followed by the duck and a little more dressing. I picked up some tortillias and fried them up for some crunch in the salad. I wanted to add some walnuts, but forgot..... I forgot the sesame seeds as well..... been a long day.....[p]For the dressing:
3 T rice vinegar (unseasoned)
1/4 Cup Canola oil
1 T hoisin sauce
2 t minced fresh ginger
1 t sugar
2 t sesame seeds (optional)[p]Just wisk everything together.

[p]Are you gonna keep doing this scoring method or are you gonna try the Naked Whiz' way next time?[p]I'd like to know because I'm thinking of doing a duck soon.[p]BTW, did you read that post about the guy following ducks around his town because he wanted to 'eat' them? Can't he get arrested for reasons he's not even thinking about?[p]speedo.

    The dressing sounds righteous. I can taste it just by reading it. Too bad you forgot the nuts. They are amazing with fatty foods![p]So, is the hammock to the right, or the left of the table in the picture?
    Will try the dressing....maybe with a little more hoisin and some tamarind extract....hee.[p]Hugs to the SO, and a big scratch behind the ear to Alf.

    aka Mr. Earl ,[p]While they weren't in the picture, the dogs are really great with people eating. They'll usually wander off or lay down somewhere. In the kitchen, they could easily put their paws on the work table and grab something (like a roast or a duck) but that's never happend, even after partially carving a brisket, and walking away to eat. Now, when I'm carving, they're usually around to see what drops...accidentially or otherwise ;)[p]I think next time around, I may try the spatchcocked method that was suggested. I have to admit, I was surprised. Wife and son are actually asking for more, and my wife snuck off with the legs (she thought I didn't see her)

    This was the first time making the hoisin dressing. I'd agree with you, more hoisin next time. But, I've never seen tamarind extract... Is that readilly available at an Oriental grocer?[p]From that view of the table, the hammock is to the left of the table, above the wall. About 15 feet to the left. Don't worry, if you don't want to walk to the kitchen, we found that the pond will keep a 6 pack nice and cool ;)
