heya folks.[p]tomorrow I plan to smoke some pork chops on my well used, old style big green egg. I have done some chops on them several times before... but I thought I'd ask around for a few things to try for somethign a little different. [p]-W [p]

Woogeroo,[p]Are these boneless chops? I always do boneless pork chops like I do steaks, except I don't get them quite as thick - I buy them about 1.5" thick, coat with salt, pepper, and olive oil, sear for 90 seconds a side, rest for 20 minutes, then finish at 400 for about 5 minutes a side. They're also good really good with numerous Dizzy Pig rubs, like Dizzy Dust or Tsumani Spin, for example.[p]Good luck,[p]TRex
