Ribs on XL .... how many

Have a need to cook up a bunch of ribs. Anybody have any idea how many I can get on the XL? I have two V-racks that I can use, or a raised grid and I could lay them flat.

    Frank, very impressive and definitely gave me an idea of how I can pull this off. What distance do you have between your racks? Haven't cooked ribs flat before. Do you just put them on and "no peek" for the cook? What time/temp did you use?

  • I didn't measure distance but probably 2-1/2 to 3". Note that I took out the fire ring for the extra head room.

    I use a Digi Q and maintain the grid temp at 240. No peak for 2-3 hours, then mist with 50/50 apple juice/apple cider vinegar every 45 minutes or so. No foil zone here. B)

    They will take about 6 hours but I don't cook to time - use the bend test to see if they are done.

    Bend Test - tongs half way down the wack and they bend about 90 degrees

    Since heat rises the top row should be done before the lower rows. I doubt there is that much difference but enough to allow you to sauce each layer and pull on 15 minute intervals so you are not shuffling wibs back and forth.

    Just a couple more questions and I'll leave you alone. This is great insight into how to setup a stack for bigger cooks.

    Total length of the bolts -- 6"?

    I haven't cooked with the fire ring out, and sounds like a neat trick. Doesn't that cut down on your lump? Still enough for a 6 hour cook at 235?

    You didn't disassemble each time to spritz, did you? Just shoot between the racks?
  • The bolts are 5" but 6" will work

    No problem cooking 6 hours plus at 235 with the fire ring out.

    I didn't disassemble on the 12 wack set up - spritz in between. I'll move ribs around (but not much) on a two level setup.

    If you are doing 6 on two levels, you don't need to remove the fire ring.

    Friscotex - does that mean you are a dislocated Texan in the San Francisco area or maybe just the opposite?
