Recipe for Pinto Beans on the egg needed

Anyone have a good recipe for smoked pinto beans on the egg. I've never done this before, so I'm clueless, but I need to start as beans is a category in most Texas cookoffs. My main experience is open can of Bush's Baked Beans and put in pot.[p]So far, I have a bag of dry pinto beans. What's next?[p]Thanks in advance![p]GrillMeister

    Never done them on the egg, but have done over campfire in cast iron pot. wash beans really good and make sure little pebbles are removed. for every cup of dried, put two cups of water. keep at a low boil, smoke with what you want. I always boil the water with some smoked ham hocks in, then add the dry beans. in any case, make sure beans are covered by about an inch over the top of them if you don't want to measure. some add onions and jalapeno's close to the end. good luck.

    GrillMeister,[p]How cold can you run your Egg? [p]Cold smoke your pintoes for at least an hour, 2's even better, as far below 200 degrees as you can go. You want a nice, thick smoke to coat the beans.[p]When they've cooled, put them in a pan on the stove. Cover 3 times over with fresh water - nothing more. Bring to a boil and boil for 5 minutes. Cover, remove from heat and let sit as is for an hour.[p]After an hour, bring water level back to 3 times over (don't drain them beans) and simmer for two hours. Now, only now, add jalapenos, onions, garlic, 'maters, ham shanks, salt, pepper, whatever else comes to mind and keep simmering a third hour.[p]Now, if you want to get foxy, mash up some of those beans with grandma's potato masher and keep simmering until ready to serve.[p]Ken
  • GrillMeister, your a better cook than that, the egg is a superior cooker, but a cooker just the same. What ever you would do on the stove, make adjustments and do one the egg better, that's it. Sorry, I'm on my way to get take out, worked my ass of all day after 18 holes and guess I'm just low on etiquette.
