First Butt on Large Egg

Put 2 6.5lb Boston Butts on last night with Dome temp of 250. Been on for 9 hours now and only to 165. Am I on pace to complete in next 5 hours or should I bump up temp? New Egg & have never calibrated temp gauge. Appreciate the input.

You are likely in the plateau. The temp will start to rise more quickly when it comes out. Do you know how long it has been sitting at that temp. Are you going to serve in 5 hours? It needs a bit of a rest before pulling.

Appears to be slowly rising. At 174 now. Yes, was wanting to pull off and wrap in hot cooler to rest in about 3.5 hours. You think I am on target at this temp?

You should be good. You can bump the temp to 275* without making any differrence.

Butts turned out great. Fell apart in my hands when pulling. Was a hit at my son's b-day part. Family loved it. thank you.
