If you cut spares St. Louis style, why not just use babybacks??

ShortRib,[p]There's more meat on a spare and, in my opinion, much better eatin.[p]Time to thaw some ribs......... heeeeeee!

Babybacks are fine, but they are double the price. That is enough for me. I also agree with my friend Dr. Woo, that they are meaty, wonderful, good eatin.[p]A large, free weekend toya!

ShortRib,
I've also heard that baby backs are a bit more challenging to get moist good results. If you buy spares and cut them St. Louis style, you have a whole lot of nice meat to cook in addition to the ribs. I like to cut the flaps off, cut into small pieces for Indian dishes.
