I got the lemon and the chicken cordon bleus

To paraphrase one of my favourite early seventies singers, Steve Goodman, I did egged chicken cordon bleu and took pics of every step. The memory card I had melted down (second time this month). Anyway it was very good.

Picked up a stainless wok with a steamer that is induction rated. High steam in a few minutes.

FaithHappily egging on my original large BGE since 1996... now the owner of 5 eggs. Call me crazy, everyone else does!

I cut a slit in the breasts and stuffed with serrano ham, gruyere, fresh basil and thin garlic slices. Floured, egg washed and breaded. Cookd on the egg with olive oil and butter. Really good! Wanted Westphailian ham but they didn't have any.

Are you doing those memory cards direct or indirect? I think indirect, low and slow with a raised grid might be ok. Direct, even on the raised grid, is gonna keep melting those cards, I suspect. Maybe brining them first would help? -

It was very good. I cut pockets in the breasts rather than splaying them. Didn't lose any cheese.Did you see my response to your side dish post the other day? Poutine is the bomb.

Looks better than the chicken I did tonight! :woohoo: Don't feel bad about you chips. Me and tecknolagy have not been getting along real good this week eather. Dang new router is giving me fits! Only one way I collaflower. Thats boiled in crawfish boil. Try it some time. Its great!
