Leftover Pulled Pork (Kalua Pork and Cabbage)

We had some leftover pulled pork so I decided to try and make a simple Kalua Pork and Cabbage dish.
DISCLAIMER: I didn't really measure any of the ingredients. I just kind of eye-balled it.
Here's what I did:
INGREDIENTS
- 3/4 pound pulled pork
- 1/2 head of cabbage chopped and rinsed
- 2 cans chicken broth
- 1/8 cup scallions minced
- Light soy sauce
- Ground Pepper
- Fresh steamed short grain rice
PREPARATION
- Heat chicken broth on medium with minced scallions
- After it comes to a slow boil add cabbage (note: it will look very full, but the cabbage will reduce/wilt as it steams)
- After it returns to a slow boil add leftover pulled pork and stir
- Allow to simmer for about 15-20 mins and add Light soy sauce and ground pepper to taste (note: we like to add more soy sauce versus using salt)
SERVING
I served the pork and cabbage over a small bowl of fresh steamed short grain rice. While it wasn't as good as they make it back home (in Hawaii) it was still pretty darn good and super easy.
