How to cook multiple layers on adjustable rig

My new Adjustable rig and bbq guru should arrive in the next few days. I've searched the posts but am having a hard time finding info on how to cook with multiple levels. Do I need to rotate the meat (butt's, brisket, etc...) from one level to the other throughout the cook. Also, if doing multiple butts or other cuts how do you pick which one you put the meat probe in from the guru. For that matter, which grill to you clip the grill sensor too. Thanks for any info. I'm a newbie but wanted to get the Guru and the rig to add as much flexibility to my new egg as possible.

    Learn to control temps on your own before relying on the guru....it may save your butt one day....can't answer the other questions as I have only had my AR a short time..

    Thanks, I agree I have to learn to control temp on my own. I just wanted some flexibility when doing the long cooks. I'd like to be able to get some sleep or go on a bike ride with the kids without worrying.
    On the AR, I can't fine anything about rotating from top to bottom on the posts. not sure if it is necessary.

    It's versatility is a little overwhelming....I would think you would only need to rotate meat around if one or the other top or bottom ..were not gettin cooked as expected...

    Simple answer as I have observed on the forum. Rotation is probably not necessary. Don't want to get one of the tweevs on my case. Send a mail to someone like grandpas grub or tmj. They will have plenty of info backed by a lot of experience. Enjoy the AR. We are all on a learning curve, which is half of the fun. I'm just starting to use mine and I will look foreward your post and cooks as you progress. :)

    The only time I have cooked multiple butts on my AR. I did not rotate any of the six butts during the cook.

    I put my Guru meat probe in the largest butt, which happened to be on the top grid. I put my Maverick remote probe in the smallest one so I would know when it was ready (you can use the Guru meat probe to approximate the internal temp of the butt it is in).

    As each butt (smallest to largest) reach my goal internal temp, I moved the Maverick probe to the next smallest one and pull the done one from the Egg and into the foil/towel/cooler combo.

  • Completely agree Wess ... Have a CyberQ and use it for overnight cooks ... guess for peace of mind. This weekend I did a butt starting at 9 pm Saturday ... when I woke up the egg was 2 deg higher that the CyberQ was set and it hadn't kicked on all night. ...

    Point is - a guru won't eliminate the need for knowing the proper vent placement, it just gives you some wiggle room. Proper vent set up will eliminate the need for the guru ... BUTT ... I still like mine for the long cooks just in case ...

    with butts and briskets i leave it to cook, at low temps it doesnt seem to matter. with ribs i grab the rig and rotate it 180, flip the top ribs and i haven't ever flipped the ribs underneath on the lower level. i rotate the rack because the ribs that overhang in the back were its hotter are cooking faster.i have never used the rig for multiple levels at higher heats but what you would want to do is grab the whole rig and take it out of the egg, rotate, flip etc and then put it back in, you don't want to do all that work with the dome open because the fire will take off and it will be uncontrollable

    Here is some verbiage from the Ceramic Grill Store for cooking ribs:
    "Cooking ribs is relatively straightforward. It’s a matter of recognizing how the ribs on each level are progressing and then rotate accordingly. During your first cook or two, we recommend that you start by dividing each stage’s cooking time by the number of grids and rotate equally. For example, on the 3-1-1 method the first stage is three hours. So, rotate at 1.5 hours with two grids and every hour with three grids. You will probably find it’s not necessary to rotate during 1-hour stages. One tidbit to note, the top ribs can baste the lower ribs."

    I have a xl and use two levels when cooking butts. I normally hook the temperture control to the green egg thomomentor and I do not rotate. I just pull off the butts as they get done at different times. I like to have a pan below the racks covered with foil. I hold that with a spider rig.

    As far as using the guru I normally start the charocoal manually and when I get up to around 200 I put on the guru. I normally start with the fan damper cut to half to make sure it does not push to much air.
    I started using the guru right away and find no reason not to.

    If you go to the Ceramc Grill Stores website, they have very detailed instructions(with pictures) on how to best utilize all of the combinations of the AR, including how to rotate.

    ;) lots of ways to cook them, if you cook them at a low enough temp you dont have to do all that :laugh:
