I would like to introduce everyone to my new mistress! Is my wife ever going to be pissed when I spend all summer with her! I believe I will call her Lola...

I was planning on doing a chicken kabob with the marinade I shared earlier today. Do you guys think I should do those with or without the plate setter?

Chicken kabobs - I love to do them (I just use marinated chicken on skewers, no fruits or veggies) on the main grid, 400º, direct.
I cook them 7 minutes per side (2 sides); guaranteed +/- 5 degrees of 170º.

what better time than now to suggest he wrap the "spill-side" of his plate setter with foil every time to keep it from getting gross. Clean up is a breeze!Re-gasketing the USA one yard at a time!

All plate setters need to be real dirty once.
You just have to put them in your oven for the cleaning cycle to turn it white again. Oh, and make sure your wife is out for the day and open up all your windows and doors...Ha...Ha...
Made those red wings for OKC. 60+ hours in food saver bags in ice. They were great. Went with your 1 1/4 cups soy and the rooster. I did skip the water for the most part. just enough to rinse the measuring cup.
Hit them with Slap Your Mama Hot and some Swamp and they were still not real hot. Oh, a shot of Dave's Insane pepper as well on one side. Not the real hot stuff.
Think I will make some for Texas Eggfest as well but I'm bringing a raised grill. To hard to cook direct at fire ring level.

re: Red Wings - that's why I cook them indirect using a plate setter so I don't have to watch them nor flip them. Funny but I think of the water as being a medium to help permeate the meat and carry in the spices in the process.Re-gasketing the USA one yard at a time!

I debated the water but it just seemed like so much liquid red gold that I did not want to dilute it down.
We were real limited on toys to cook with.
Will bring my own to Austin. Very good stuff. Thanks for your posts.
