Ok, would someone tell me why I did not try this sooner?
Can not believe how good this turned out. Posted some pics on Photobucket, but don't remember how to attach them. Anyway thanks to all for your help in making this another success.

I am a huge fan of buckboard bacon, my wife and daughter absolutely love the stuff.....
just one of my attempts @ buckboard bacon, I really need a meat slicer though, I'm lousy with a knife, unless it's to cut myself :P
