Spare Rib - Trim?

I have had my BGE long enough to have cooked spare-ribs about 3 times.[p]Each time, I have trimmed the (sort of) extra piece of meat attached as the instructions suggest. My ribs have been very good and I have no complaints but--[p]I am wondering if the ribs would be just as good, following the same instructions even if the "extra" meat was not trimmed off.[p]Any thoughts will be appreciated.[p]Kyle

    I have been cooking ribs for 30 years. I never trim them. The extra, thinner part comes out a little tougher but can be used in many different ways, including consumption with the the thicker ribs.

    KL,[p]If I'm cooking for competitions and I choose spares, I trim that piece off and also trim the chest bones off as well. I just want the long rib bone to turnin. The rest of the stuff I throw on the cooker about 2AM, rubbed down with my rub, and let it cook, makes nice rib tips. Tastes real good for breakfast and gives the folks walking around the event Saturday AM something to grab as they walk by. Also lets me know about how the ribs are going to cook etc. Kinda like watching a golfer hit the same put right before you, you get a good idea of what yours is going to do.[p]Now, when I cook at home, I just throw the whole darned thing on the cooker and let 'er go, no sense in wasting all of that good meat.[p]Troy
  • KL, I always trim em like on DizzyPig site and enjoy them that way. I put the sides on with the rest and don't worry how they look but the trimmed ones do look better so you can have a plate of purdy ones on the table for the quest and you can be in the kitchen chowin down on an extry one or two.

    I like to leave the trimmings on even though they don't look as good as when they're trimmed. It also gives everyone a little more meat. I gotta admit though I served some trimmed ones the other day, and the wife seemed to like them alot. Wonder if it had anything to do with the trimming? See-Yaa
