cooking ribs overnite on a lo and slow? I need to sleep a little so here is what I'm thinking. Midnite on Saturday start 4 racks of ribs (indirect) using platesetter with grill extender and brisket sitting on top. Set at 225 using Guru and pull at 7 am. Wrap and Wrun to pool party for 12:00. Idearz are welcomed, NO, I don't wanna cook and reheat.TIA

    Well my ribs have always been done much earlier than that at 225. I think the max I have done is about 5 1/2 hours for some large spares. My guess is that they would be over done and dry but again I have never tried it.[p]Toy Man

    Chef Wil, Too long, I would do the cook from 9pm till 12, then put in the fridge till sunday and then grill and sauce them for eating

    Chef Wil,
    do a test run with the grill set point at 175 and the meat setpoint at 160, put both probes in the same area (not in the meat) it should maintain 160. that will slow the cook way down. could also use frozen ribs to slow it down(marinade or whatever before freezing.
    using these methods id bet 6 hr ribs become 12 hr.
