Stuffed Catfeesh!

<p />Been busy to the core, and not able to read all what is going on on this growing forum, but but still been getting in a little cooking. Today I had to think quick because in 90 minutes the wife and kids would be home from piano lessons. I needed milk so I started a fire in the medium egg and zipped off to the grocery store. Saw a nice thick catfish filet, and a lightbulb lit up. Got me some portabellas and crabmeat....well, imitation crabmeat is what I ended up with. No problem.[p]Went home and sauted a vidalia onion and the diced portabello until almost caramelized. Added some sherry and let it cook off, threw in the imitation crabmeat and some rub and set aside. Meanwhile I toasted a piece of bread and shredded, cracked an egg in a bowl, a squirt of milk and whisked. Added cheese, bread crumblies, and the shroom/onion mixture....then some chopped pecans....with some rub.[p]Cut a scoop out of the filet, shook some rub onto the fish, and laid in the filling. Then laid the "scoop" of catfish on top and pressed. Threw some pecans on top, and some more rub for good measure.[p]Cooked on the medium egg indirect at 400. [p]Dang.     The girls (and lady) loved it. Once in a while I make "not enough" food. And this was one of those times.[p]Lick-o-vision?? You need chew-o-vision for this one. A lick will only let you taste the outside.

    <p />Nature Boy,[p]That looks pretty darn tasty. Here's a shot of another stuffed catfish that Hot Ash email to me yesterday. This was in some guy pond. The basketball had to be punctured before the fish could be set free.

    That's one good lookin' piece o' fish, Chris!! I'm experimenting with something similar for an upcoming dinner party. I'm rolling the filets around the stuffing and then coating with mayonnaise, rub and chopped pecans. I've almost got the recipe the way I want it. I'll post it when I'm happy with it.[p]Jim

    Dang Chris, you got me in the fish cookin' mood again. I just talked to my son about 2 hours ago, he's at KY lake with my dad and they took a guide out fishing today. Apparently they got into a mess of white bass and limited out. My son was as happy as a kid could be fishing with Grandpa AND a real guide. Cool. Cant wait to get some of those fishies home and cook 'em up. That stuffing you made sounds awesome too, may just give it a shot. Heading to KY tomorrow after work for the family get together, may have to try and snag a few of them bass myself.[p]My SON is really into cooking now also. At the Mt. Vernon competition we had the kids Q and he took first place in his age group for hot dogs and also won best presentation overall for hot dogs. Turned him into a cooking fool. Now, if his old man could just replicate his winning ways he'd be much happier, got spanked alst week in Poplar Bluff. I tell ya though, after getting his name called twice the weekend was over for me, I didnt really care what happened at all, that made it for me. I actually think momma may have cried a bit. Cool stuff and awesome memories for everyone.[p]Troy

    If anybod can cook up feesh it is you! Good luck with them white bass. Them are good, and much firmer than their black bass cousins. [p]One thing I liked about the stuffing I used is that the imitation crabmeat gave it that saltwater seafood taste that offset the lighltly empty taste you get with freshwater fish.[p]Congrats to your son for the big showing in the kids Q! It is a joy to see them get hooked so young. Just think of the potential if he keeps it up. He'll be cookin' up a storm by the time he is your age! LOL. My 14 year old nephew (Kenny....the frisbee kid) will be trying his hand at the kids Q in New Holland this August. He is pumped....but has lots of practicin' to do![p]Glad I could spark that fish cookin' mood in ya again!
