Cornish hen marinade?

Thawed out 2 cornish hens to cook tonight and decided to put them off until tomorrow.

Any good overnight marinades for these little birds?

    I use Italian Salad dressing and a poultry rub. Not sure overnight does much for the flavor. Poke a few holes in the skin and try for a few hours.

    I've got a couple for supper brining right now in Kosher salt. Seems that works for our tastes along with DP for topical taste treats.

    I'm not a fan of orange marmalade, BUT, when you pair it with horseradish on them little birds it is absolutly delicious!
