How many ribs?

I'm tasked with cooking ribs for about 30 folks on the 4th. There will be other food (burgers, dogs, etc), and the 30 will be relatively evenly divided between men and women. Any guesses on how many slabs or pork spares I should cook?[p]I may end up just cooking as many as I can fit on the cookers I have available. Also, I hear there will be some beer pong played at this event. I need to make sure I don't get too fancy on the ribs so I have time to relive some old college memories...[p]Heeee,

I'd figure on 3 to 4 ribs per person. If you go with 3 that's 8 racks. 4 would be 10 racks. Your cooking on a WSM right ? If you roll the ribs you should have enough room.[p]Steve

YankeeBBQ,[p]Thanks. I'll have the WSM plus probably my Portable Kitchen and Small Egg, just for kicks and spillover ribs. It's always good to have extra grill space in case any of the party-goers find any other dead animal they want to throw on a fire.[p]Later,

I agree about 3-4 ribs per eater. What I did was 2 hours for the ribs indirect, 1 hour wraped(well not really, I used 9' alum pans and cut the racks in half and then covered the top in foil) after the hour, cooled them down and put away in the fridge) I left them in the pans till eating day then warmed them up in a oven at 200 till they just werent sticking together, then we grilled and sauce them on the spot to a nice color and flavor. I had cut the racks to 3 and 4 rib sections and left them like that. I did 15 racks two days ahead of the party. They were great and had no leftovers

Ahhhhh... beer pong. If it's the same we used to do at WVU, you lay a flat door down as a table, or use a ping pong table minus the net. You then arrange plastic cups in a triangle fashion, like this...

o o o[p]Filling each cup half way with beer. Two teams. Object is to bounce a ping pong ball into the cups on the other side of table. Once in, that team has to drink that cup and it is removed from the triangle. Team with the last full cup wins. Oh yeah, if your team loses, you have to drink what i left of the winning team.[p]May not sound great, but it's quite fun...... I wonder if the doors in Ocala will work.... hmmmmmmm.......
