I need a Stuffed Bell Pepper Recipe-or two

I made some stuffed bells w/ground beef, pork and rice, or something like that but I cant remember where I got the recipe. Any help is appreciated.[p]Scott

Borders, here's one that's been posted. I haven't tried it:
Stuffed Green Peppers
Bell peppers stuffed with Italian sausage and cheese
[p]Ingredients:
4 Large bell peppers, red or green
1 lb Bulk Italian sausage
1/4 cup Onion, diced
5 oz Yellow rice
4 oz Parmesan cheese, grated
56 oz Spaghetti sauce
2 cups Mozzarella cheese, grated
4 Large garlic cloves, peeled
Preparation Directions:
1 Cut tops from peppers and remove membranes and seeds.
2 Par-boil for 5 minutes and drain. Brown sausage and onion and drain.
3 Cook rice according to package directions.
4 Mix sausage, onion, rice and Parmesan cheese.
5 Stuff peppers.
6 Spoon a layer of spaghetti sauce into a 9" square baking pan.
7 Place peppers into the pan. Sprinkle 1 cup of Mozzarella cheese over peppers.
8 Pour remainder of spaghetti sauce over peppers.
9 Sprinkle the remainder of the cheese over the top.
Cooking Directions:
1 Bring the BGE temperature up to 350°.
2 Just before you place the pan of peppers onto the grate, toss the 4 cloves of garlic onto the hot lump charcoal.
3 Place the pan of peppers onto the grate and bake at 350° for approximately 30 mintues.
Servings: 1

possibilities are endless, rice dressing is always good, cornbread dressing, shrimp jambalaya, mac and cheese is good in bellpeppers. Which ever is your best rice dish can be put in bellpeppers. Grill some chicken breasts, chop them up coarsely and saute onions, tomatoes, and garlic, add a little cooked rice or orzo, and stuff your peppers. If you use orzo, top off with a little cheese or alfredo sauce...........good eatin MAN.

Borders,[p]I don't have an exact recipe... more like an idea... for something different. We had vegan company and I needed to come up with something for dinner. I went to the market and picked up various fresh vegtables and mushrooms...[p]Sauted some onions in olive oil till soft
Sauted some mushrooms (various types)
Sauted some yellow and green squash
Skinned sliced, and sauted a red pepper and an ancho pepper
Toasted some pine nuts (pignoli)
Optionally sauted some corn[p]Mixed all the vegtables together with rice and added some raisins.[p]Stuff the peppers and top with tomato sauce of your choice (I use homemade) Mixture works real well stuffing rolled cabbage as well, top with tomato based sweet and sour sauce and/or some sauerkraut.
