First pull pork
Hey, I have read several ways to put a shoulder on the Egg. So I did it my way and think it will work fine. I put my V rack in a drip pan on the Egg grill. Then I put a pork shoulder (two pieces) about twenty pounds on the V rack. Using hickory chips and setting the heat at 225, I am going to check the center of the meat after 12 hours. I made my own rubb for the meat and kept it in the fridge about 12 hours. Good luck huh !!![p]

Sounds good, except that it may take 20 to 24 hrs. I've done 3 now and that's how long it took to get to 200. Actually that was after cranking the temp up to 300-330 for the last 3 hrs. No telling how long it'll take if you keep it at 225. It goes through a long plateau between 150 and 160, supposedly when the connective tissues are breaking down (which allows you to pull the pork). This phase takes a long time.
