Pork fried rice...

Morning All:
Had a piece of pork tenderloin left over from Easter dinner, so pork fried rice sounded good.
Start with some carrots & onions...

Next fried a couple of eggs (no pic). Then the rice, followed by the pork...

After the rice & pork cooked some, added back in the carrots, onions & egg...

Went a little longer to "crisp" up some of the rice and ended up with a nice full bowl...

and of course a closeup...

Fried rice is becoming a common dinner for us (the leftover rice will go well in the lamb-based soup EggHatter did last week with the leftover lamb lollipops).

Overall it is a pretty easy cook, not to mention a very tasty one! I've done it with pork a few times, shrimp once and if I remember correctly with beef once. Any and all variations are nice. I was too lazy to go to the store today to get some snow peas, but they are good with it too.Have a GREAT day!

Jay, the fried rice looks delicious. Are you practicing your knife skills? I noticed the carrots and onion were very evenly and finely diced! Nice.
