Had dinner at a friends house tonight. He cooked some Omaha filet mignons on his grill. He left the lid up the whole time and cut into them to check for doneness. And he cooked them on like medium heat setting. Needless to say they were overcooked and dried out. Too bad. They could've been much better, but I didn't want to take over his grill. I so wanted to go over there and crank up the heat and close the lid and whip out my Thermapen (had I brought it) and show him how good those steaks could've tasted, even grilled.

I've got two porterhouse steaks ready for tomorrow's cook, so that'll make up for tonight.

Good company though and very good wine. No slouch there.
I like my butt rubbed and my pork pulled.

    One of the apsects of being an Egghead and possessing knowledge gained from other Eggheads, is becoming adepth at biting your tongue when a guest at some elses cookout. In recently sat though a discussion where a couple of gasheads were discussing the replacement of their grills "flavor bars".

    I so feel your pain! I have a bone-in NY strip in the fridge for tonight. Manager's special, the store was nice enough to age it for me and give me a discount. Nothing like a good steak on the egg. IMHO Omaha steaks are way overrated. Not much flavor there, especially when over cooked.
  • I hear ya. I was over at a friends house and they were cooking filets on the gasser. I knew for sure they were going to be overcooked, so the best I could do was grab a plate and ask for one WAAYY before the rest of them were taken off. I put foil over it and let it sit in the kitchen. When they finally served the steaks to everyone, of course mine was medium rare, but the rest had no pink at all.

    These were good enough friends that I could ask this, but sometimes that is not the case!

    Sheeesh, are we spoiled!!!

    I know the feeling. You just want to give a hand but you know deep down inside you just have to bite your tongue. We are a bit spoiled with the EGG but a lot more knowledgeable as well from experience and this Forum.

    Yea my discount choice thin porterhouse Food Lion steaks were still better than his overcooked Omaha filets. I took them to medium by mistake cause they were so thin and cooked so quickly. 550 direct for 8 minutes is too long. They were on sale so I was suckered in. Thick ones from a new butcher shop next time. The place is called Longhorn and Lager;
    http://www.longhornandlager.com/. The owner is a nice that likes his beef, and only sells what he'll eat. He's a gasser guy. I've already told him the wonders of the Egg.
