Ever put a container of apple juice in with your turkey?

I tried this last Thanksgiving. Put the turkey on the poultry rack and then put a metal tin in the egg with about 3 cups of Apple Juice in it. The juice kind of carmalized onto the skin of the turkey and it was a nice effect. Tasty too.

    when i roast a turkey, i alwasy quarter two apples. .one goes in the bird's cavity and the other gets thrown in the roasting pan to mix with the drippings that will eventually be used to make the gravy. . .then i pour about 1/2 a bottle of white wine in and over the turkey. . .its most excellent. . .and again, along with the two sticks of butter i rubbed all over the bird makes for fantastic gravy starter. ..i would imagine that apple juice does much of the same kind of thing. .

    Yep. Seems like the apple juice is a poor man's version of what you describe. I too butter the bird before putting it in the egg. I am following the discussion of the brisket. I have never been satisfied with brisket that I have made in the egg. I think my temp gets too high. It also could be that since I am from GA I think all BBQ should be pork and that beef is best as a steak. :)
