Fajita Sauce Recipe and Fajita Pics

Made some delicious fajitas last night and came up with a simple but tasty fajita finishing sauce.

I made my normal fajita marinade and reserved 2 Tablespoons of it.
NMT Steak Fajita Marinade
1/4 cup Oil
1/4 cup Lime Juice
1/4 cup Tequila
1-2 clove Garlic minced
1 1/2 teaspoon Season salt
1 1/2 teaspoon Oregano
1 1/2 teaspoon Cumin
1/2 teaspoon Chili powder
1/2 teaspoon Paprika
1/2 teaspoon Red pepper flakes
Then I marinaded my flat iron steak and veggies for about 2 hours. Threw the steak on the cast iron and the veggies on the griddle insert. Man, that smoke smelled so good I know the neighbors were hating me.

Meanwhile, I mixed the 2 Tablespoons of the marinade with 1/2 cup of sour cream to make the Fajita Finishing Sauce. It tasted so good I could have eaten it straight.
Then just a quick drizzle over the fajitas.

Yeah, that wasn't half bad.

I keep forgetting how good Flatiron Steaks are. Never really thought of them for fajitas. Your recipe looks good too. And like the way you utilized the griddle with the grid.
