I NEED HELP W/ RED SNAPPER FILLETS, STAT!!

i just got back from the grocery.. didn't feel like the same old, same old. . .spawn and i spotted some nice fresh red snapper fillets. . .bought 3 of them, each about 3/4 pound w/ skin on. ..any advice on egging them??. . .gonna stat the egg in about an hour so any quick advice would be appreciated...     mad max beyond eggdome, use the same recipe you would do on Salmon ( raging river rub, inndirect @ 300F til the file' become flaky)

    thanks. .. i was wondering if i could do the same sort of thing. ..i bought a bunch of lemons to do the bed of lemons on the grate. ..and so i think will do exactly that. . [p]should i brush them with olive oil like i do the salmon??[p]thanks again[p]max

    thanks a lot. . .looks like a little olive oil, a little ragin river, gilled on the lemon be. .. you know me. . i'll take pics and post tomorrow :)

    thanks, a little melted, brushed on. ..sounds like a winner too. .. .maybe i'll olive oil the skin side and butter brush the 'meat' side. .. .[p]thanks again

  • mad max beyond eggdome,[p]If your going to use melted, might like to try small amount of dry white wine in there too.[p]Another choice is to use Bernstein's 'Original' Restaurant Recipe Italian Dressing... (this Really is good as a thin covering / marinade for salmon too. Other brands, concoctions are not good though [at least the ones I've tried]).
  • thanks for the tips guys. . .fish was great. . ..went direct on th lemon slices as 325 direct, brushed the skin side with olive oil, top side with melted butter and raging river with a squirt of lemon juice about 10 minutes in. .. left em in about 18 minutes (probably about 3 or 4 minutes too long for my taste), and they tasted excellent!!. . .the whole family loved it and said "this is a keeper, do it again!"[p]next time, i will try a little white wine as well. . i didn't read that till after we ate. . [p]pictures will be up tomorrow.. ..[p]thanks again
