Steak Jerky

This idea started with me walking out of the market with 2 huge ribeyes that would have brought Stump to a puddle of tears. Each steak was over a pound and just plain perfect. [p]I decided to make them 2 different ways. One had a light coating of Ken's Solid Ball rub, and then black pepper crusted. The other got a coat of olive oil and then a heavy dose of Solid Ball.[p]Cranked up my small egg, (man I love my small egg, as many of you predicted I would) and cooked the steaks to medium, which is they way we like em at the Borders' house.[p]There are 2 things you can count on when I do steaks. One, there will be leftovers. Two, I will fail to effectively use the leftovers. So I'm putting away a pound of leftover ribeye, and saying to myself, what a waste this will be. Then it came to me, steak jerky.[p]You should have seen the joy on my wife's face, when I told her that I was not, in fact, done trashing the kitchen for the night. Nothing but unbridled joy, as I pulled out the cutting board and the dehydrator.[p]I sliced the steak in 1/8 inch slices and hit em hard w/ Kosher salt and black pepper, then dehydrated for 8 hours. The result would bring Stump back to tears again.[p]The jerky is very dry and crunchy. Totally different than classic jerky in every way. It tastes like steak, and its not wasted sitting in my fridge.[p]The bad news is, since it was not marinated in high salt content, I believe the shelf life is short, even in a food saver bag. The good news is, shelf life just ain't an issue. I reccomend you give this a try.

    Borders,[p]Sounds interesting. [p]I rarely have any steak leftover, but in the couple of instances that I have, I just threw it in a skillet the next morning with some eggs and had steak and eggs with fresh biscuits - makes you feel like a king at the breakfast table.[p]Just another idea of what to do with leftover steak . . .[p]TRex

    This is a favorite of mine.
    Also, you could make a quick beef hash if there are leftover potatoes. By the way, Dizzy Pig Red Eye Surpise is perfect for this.

    I use the left over steak for kabobs the next day. If you are worried about that reheated taste, you can marinate it in Coke. It gives it a slightly sweet taste and no reheated meat taste. --A2B

    You guys are describing exactly what my intentions always are for the leftovers, but I never pull it off.

    TRex, down pricing steaks last night. May have to take out loan to buy steaks. Things getting higher and higher. One of these days gonna get me some steaks and try your wonderful method. Ready for Texas Eggfest Fall?

    Here you go:
    Here is the quick version. I had some leftover Roast beef and whole potatoes.
    I diced everything up and threw the potatoes into a cast iron skillet with a chopped onion. After 10 minutes, I put the beef in the skillet along with whatever juice was in the dish. I also dumped in a cup leftover coffee and some Dizzy Pig Red Eye Surprise. After 10 minutes, the liquids had evaporated and the dish was done.[p]Hope this Helps,
