<p />Man...that Yardboy sure do can put out some recipes. Been reading all the hype about dat Vie-dalia Oan Yone Pah, and decided to give it a go! Only addition was a half pound of shrimp and some rub. Ooooeeeeboy. At first an "onion pie" don't sound that great....especially to twin 9 year olds.....but when I added the shrimp, i said "Kids, I am making a "vidalia shrimp pie" and they were on board. Alls I can say (and Jenna and Kara too), is that it didn't taste like onion.[p]On the other side was skewered and lava-seared tuna. Thanks Yardboy!!!

    I think you talked about this tuna thing a few days back, but can you ellaborate about the sauce again please? Also, time and temp for tuna. I gotta try this one real soon.

    When I cook at home I almost never do the same thing twice. This tuna was cut into maybe 1.5 inch cubes. I marinated in soy sauce, dijon mustard, olive oil and raging river for an hour, then skewered them and shook on a light dusting of Tsunami. Careful to skewer them against the grain or they could fall apart.[p]Not sure what the temp was, as when cooking direct I go more by how orange the fire is. Maybe 500-600? I think they were on about 2 minutes a side. But go more by look and feel than by time. If it takes you more than a couple minutes to get a good crusty sear, then it is not hot enough.[p]As soon as they start firming up you want them off of there. If they aint pink inside then, IMO, they are overdone![p]Cheers!
