Are you using charcoal briquettes or this?

This is well burning lump, the flame normally isn't there, however, due to the dome being open while taking the pictures it did flame up.
This was a cook using very small pieces of lump only loaded to the top of the holes in the fire box.

Congrats on your new Egg, and yes get the Small to take "camping".
I'm sure your Fish will be great.
Most all the advice you get here will be sound, but make sure to form your own opinions and techniques.

What part of Louisiana?
There are several La Eggers that stop by and say hello
Mike in Abita, Hungry Celeste, Kenny 13, and Bayou Mark come to mind.
Here is what we take on the road - a small and mini
A simple carrier will keep them safe and you can flip and use them as a stand (but put a paver between the Egg and stand)
-
You take the pictures and we will help you get them up.
Easier than cooking.
You know you can only post twice then if no pictures you are stuck. Oh, I guess that won't work you have already posted 17 times.

Good luck with Eggin - you are geauxing to love it.
Ask questions - the folks in this neighborhood like answering questions and helping out. Learn how to post pics too. -
Since you like fish, you may want to get a CI skillet and try some blackened fish.
