Alaskan Amber Beer Marinated Salmon

Hello all. I usually am not one for much posting, but I couldn't resist this one. I got a recipe for this salmon on the alaskan brewing company website, follow the link and look for 'Alaskan Amber Marinade'. It is a soy/cilantro/ginger marinade - almost terriyaki, with beer added. Alas, we do not have any Alaskan Brewing Company beverages around here, so I improvised with a homebrew, an american-styled wheat.
What I added differently to the recipe, is that I took a pineapple, cored it with our pineapple corer, sliced it lengthwise into two halves, placed the copper river salmon filets into it & cooked it at about 400 degrees dome temperature for about 20 minutes or so. The outer parts of the pineapple were black, but while cooking, the interior was bubbling away & added quite a nice-n-sweet tropical edge to the salmon. Two thumbs way up....I am going to be experimenting with more pineapple cooking, but I wanted to share my great results. Has anyone else tried any cooking like this with a pineapple?

    Does your wheat beer have any barley in it, can you make wheat beer without any barley?

    It does have malted 2 row barley in it in addition to wheat. I believe the percentage is like 60-40 barley to wheat. I have never tried it with just plain wheat. I've actually never thought of it. However, if you can ferment it & it has sugar you can make alcohol. So...that being said, I guess you could....I don't know if I would like the results....Belgian wheats with coriander, spice & orange additions are my personal favorites...Similar to a Blue Moon brewing company wheat or any of dozens of belgian wheats....

  • Martini Mark in MSP, The reason I ask, because I've developed an anafilactic reaction to 'barley'(6 yrs ago).[p]Fortunately, after I'd had many German beers on two europen vacations many years ago. Oh, the flavors, (memories only now) were great. Each town I'd stop in I'd order the local made. Was a good time, and each tasted slightly different.[p]I've tried several 'wheats' since - almost did me in....[p]I sure miss the flavors and aromas, eating bratts etc...[p]

    Sorry to hear about that...I'll assume you are certain that the barley is what you have the reaction to...How about mead? That is usually just honey & herbs fortified into a beverage....there's always a martini.....
